Belle Meade Plantation Beaten Biscuits

- 3 1/2 cups all-purpose flour (with 1/2 cup held back)
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 3 tablespoons cold butter
- 3 tablespoons cold lard or vegetable shortening
- 1/2 cup cold milk
- 1/2 cup iced water
Directions
Mix 3 cups of flour, sugar, and salt. Add butter and lard, cutting in with a pastry cutter until mixture resembles coarse cornmeal. Add milk and iced water, lightly blend until moistened. Knead 15 minutes, then beat the dough with a rolling pin for 15 minutes until the dough begins to "blister and pop." Cut with a small floured biscuit cutter, prick tops three times with a fork.
Bake on an ungreased baking sheet at 325 degrees for 25 minutes until light golden brown. Makes 35-40 small biscuits. Store at room temp in an airtight container for up to three weeks. Especially good with thin-sliced Southern country ham!
