Eleanor Braddock's Shortbread

- 3/4 cup butter at room temp (1 1/2 sticks)
- 1/2 cup powdered sugar
- 1/3 teaspoon vanilla
- 1 1/2 cups flour, sifted
Directions
Preheat oven to 325 degrees. Lightly spray a small (8-9 inch) cast-iron skillet with non-stick spray. Cream butter until light and fluffy. Add powdered sugar, then vanilla. Work in the flour. Press dough into iron skillet. Bake for 30-35 minutes until golden brown. Cool 10-15 minutes, then flip onto a cutting board. Cut into pieces while still warm. Serves 10-12.
Historical note: In 1851, Oliver Chase developed a mill for powdering sugar. Before that, refined loaf sugar was pounded into fine powder in a mortar and pestle. So much easier today!
