Ingredients

  • 1 cup canned pitted dark sweet cherries, well drained
  • 3/4 cup canned chopped peaches, well drained
  • 1/2 cup fresh seedless red grapes, cut in half (firmer grapes are better)
  • 1/2 cup fresh seedless white grapes, cut in half (firmer grapes are better)
  • 3/4 cup maraschino cherries, cut in half
  • 3/4 cup canned crushed pineapple, well drained
  • 1 cup chopped banana (one medium banana, not overly ripe)
  • 1/2 cup chopped pecans
  • 1 pint whipping cream
  • 2 tablespoons powdered sugar
  • 2 tablespoons lemon curd (can be store bought)

Directions

Drain all fruits in a colander, then pour into a bowl and gently mix together. Whip the cream until soft peaks form. Fold in the powdered sugar and lemon curd, being careful not to over mix. Stir in the fruits and pecans. Line a mold with plastic wrap—a large loaf pan, square mold, or round mold (like the Swan Coach House uses) all work perfectly; individual servings can also be frozen in cupcake holders. Freeze 8 hours or until firm. If using a mold, remove and slice (or pop out) to serve.
